Rhythm Ciders are fermented in a very particular way, through processes known as cryoconcentration and cofermentation. First, the locally-sourced apple juice is frozen to separate the water and preserve the crisp apple flavor. Then, the frozen juice is fermented with juices from other locally-sourced fruits to create unique and delicious concoctions, such as the Blueberry Hard Apple Cider, the Heirloom Apple Cider, and the Hard Blood Orange Cider.

How is this for an enticing description: hard and ice ciders include semi-dry, Champagne style, bourbon barrel aged, and sweet ice ciders, using Macintosh, Empire, Northern Spy and Roxbury Russet. Sound delicious? The establishment’s tasting room is located in the maple sugar house, where that delicacy is produced in early spring. Also for sale are grape wines made on the farm.

Ciders are made from local apples and all-natural ingredients. The tasting room, located in the heart of Salem less than a mile from the Salem train station, presents samples, flights, and full pours and sells growlers, bottles, and cans to go.

The Maloney family moved from northern California into the heart of New England’s apple country and began making hard cider commercially in 1984. At the time, cider was under appreciated except possibly in hill counties and the commercial market was slight. Guests are welcome to the tap room and bottle shop, and, the farmers note, there are new hiking trails and a picnic area right nearby.

Woodchuck claims to be “ The Brand That Started the American Cider Revolution.” That is big talk, and it may or may not be true, but you will find good-tasting apple cider here. Vermont Hard Cider Company, owner of Woodchuck Cider House, produces many popular ciders year-round, along with some seasonal flavors, like sangria. On Saturday, English premier league football is on the telly from 11 a.m. to 5 p.m. Sunday Funday’s specialty is Sangria draft, also 11 a.m.-5 p.m.
